Problem with a payment method and a shipment

Hi I'm redoing the site and I made a copy of the site, updated joomla to version 3.10.11 with a new template and now I have noticed a problem with the payment with pickup in the shop linked to the shipping method I called pickup by hand in the shop, see attached.
In the "old" site if I choose as payment method: "Payment at the time of pickup in the shop" then afterwards I don't get "preset" the shipping method: Pickup by hand at Coltelleria Iori
On the new site it doesn't, what can I do?
