If I add an order manually, nothing is displayed in the email though:

I checked customers mail...
otherwise I wouldn't know :-)

Normal orders work
Problem only if the order is added manually in the backend.
Did you check that?

if your send new order from admin -> used "Description of the order for the customer (in email) (send manually) "
+ if not empty

after resave "Description of the order for the customer (in email) (send manually)"
-> works
